NuMex Big Jim is a legendary giant chile developed by the Chile Pepper Institute at New Mexico State University and once recognized as the world’s largest pepper variety. Plants reach 2–3 feet tall and can crank out 24–30 massive pods per crop, each typically 10–12 inches long and weighing around 4 ounces. These thick-walled chiles ripen from green to deep red and deliver a mild-to-medium heat, making them perfect for families and anyone who prefers flavor over fire.
