The thick, meaty walls make these chiles ideal for roasting, stuffing, and peeling, as they hold their shape and texture well. Joe E. Parker chiles can be harvested green for classic Hatch flavor or allowed to ripen red for deeper, richer chile taste with slightly more heat. Scoville levels typically range from 500 to 2,500 SHU, emphasizing flavor over extreme heat.
