The Sinahuisa is a standout annuum variety from a Mayo communal farm in Sonora, Mexico, and it brings way more character than its Serrano-like appearance suggests. These slim, 1.5–2 inch pods pack a vibrant, medium heat with a richer, sweeter flavor than any standard Serrano—making them incredible for salsas, sauces, escabeche, or drying for powder.
